Lee Miller has been our primary contact at Sunrise. Sunrise Metal Shop is the manufacturer of our wood-fired evaporator. (We selected the Spit Fire 4 X 6 model) Sunrise is also the manufacturer of our finishing pan and finishing pan burner. In addition we purchased several other pieces of equipment through them including our Sheets hobby filter press, and our Deer Run Maple reverse osmosis machine. We appreciate the integrity of the Sunrise management team and their commitment to the maple syrup industry . . . as well as their ability to serve the needs of the hobbiest.

Pete is a great (technically competent) contact at Headwater Manufacturing.

Not many producers at the hobby level have invested in the integration of UV technology. Fact is, not many commercial producers have either. The reason for hobby level producers to invest in the integration of UV technology is all about yield and end product quality. UV kills the bacteria that degrades sap quality during storage. We have found it is especially vital is sap is to be stored more than a few hours after it has been processed through reverse osmosis.

Further, Daryl Sheets (Owner of Sheets Tool and Manufacturing and designer of the machine) is a leader in the maple syrup industry in Pennsylvania and is very passionate about providing good service. The Sugarmaker's Companion: An Integrated Approach to Producing Syrup from Maple, Birch, and Walnut Trees

http://www.amazon.com/The-Sugarmakers-Companion-Integrated-Producing/dp/1603583971

[Link to PDF of book promotion]

NOTE: Michael Farrell has been very helpful to us. We enjoy working with him and find his book most informative.

The Sugarmaker’s Companion is the first guide of its kind addressing the small- and large-scale syrup producer seeking to make a profitable business from maple, birch, and walnut sap. This comprehensive work incorporates valuable information on ecological forest management, value-added products, and the most up-to-date techniques on sap collection and processing. It is, most importantly, a guide to an integrated sugaring operation, interconnected to the whole-farm system, woodland, and community.

It is authored by Michael Farrell, sugarmaker and past director of the Uihlein Forest at Cornell University. The book offers information on setting up and maintaining a viable sugaring business by incorporating the wisdom of traditional sugarmaking with the value of modern technology (such as reverse-osmosis machines and vacuum tubing). He gives a balanced view of the industry while offering a realistic picture of how modern technology can be beneficial, from both an economic and an environmental perspective.

We made the trip to central Michigan and spent some productive time working with Aaron on the design of our sugar shack. Aaron is a pro and listened to what we wanted to accomplish with the building. We’re very satisfied with the end result. Check out his web site for a great 'sugar shack" video of when they were getting things underway with our sugar shack.
